Made solely in stainless steel it is left to mature on lees (stirred weekly) for 8 months before racking and maturing for a further 16 months
The fermentation takes about 4 months
with the small berries leading to greater concentration of flavours
planted by an Italian bootlegger in 1922
ethereally light and delicious – I hate the term smashable as it sounds crass
