The other portion was whole bunch pressed. All fermentation took place in old oak. It spent 5 months in old oak on lees before it was moved to stainless steel for a further month. It was fined with vegan friendly bentonite, racked a few weeks later and put through a gentle pad filter before bottling. In true Lyons Will style this
